Our Fennel has a strong aniseed flavour and healthy green looking, feathery leaves. Normally, these leaves arise on top of a fennel bulb vegetable and are thrown away with the outside parts. However, these leaves have a beautiful fine, fennel taste that can excellently be used for cooking. That’s why we decided to produce Fennel as a microgreen in our vertical farm.
Next to our green Fennel, we also have a Bronze Fennel. The taste is quite similar, however the colour is different. Restaurants like to use our Fennel mostly as garnishment – to top of their beautiful dishes.
Fennel can be used in a variety of ways. You can mix the fennel microgreen into pestos, salsas, stocks, curries, and vinaigrettes for an added hit of freshness. You can also use them to top off yogurt dips, eggs, stir-fries, toasts, and seared meats. And they’re delicious when tossed into green salads or strewn on top of roasted vegetables. You can also make tea of them!
