Most people know lentils as edible seeds that can be cooked into delicious Indian or Mediterranean meals. Here at Chef’s Farm, we grow beautiful microgreens from these seeds. The result is a firm bright green microleaf, that tastes sweet and bitter with some nutty undertones. Kind of like lentil legumes!
Basically, since the beginning of humankind people have been eating lentils. Archeologists have found remains of lentils dating back to 8000 BC on the banks of the Euphrates River in what is now northern Syria. Known for its high contents of protein and fiber, it is considered essential to vegetarian diets – reflecting Indians’ custom to have at least one lentil dish for supper.
