Our Fennel has a strong aniseed flavour and healthy green looking, feathery leaves. Normally, these leaves arise on top of a fennel bulb vegetable and are thrown away with the outside parts. However, these leaves have a beautiful fine, fennel taste that can excellently be used for cooking. That’s why we decided to produce Fennel as a microgreen in our vertical farm.
Next to our green Fennel, we also have a Bronze Fennel. The taste is quite similar, however the colour is different. Restaurants like to use our Fennel mostly as garnishment – to top of their beautiful dishes.
